  1. Interesting to see reference to the Abruzzese origins of bucatini all’amatriciana, a dish which today is thoroughly associated with Rome. The town of Amatrice was indeed once part of Abruzzo Citra, and didn’t become part of Lazio until the founding of the Rieti province in 1923. However, the popularity of the dish is 100% Roman, as is the proliferation of bucatini as this sugo’s pasta of choice. No coincidence it is the favorite food of Alessandro Nesta, Romano DOC.
